摘　　要：该文以聚丙烯酰胺凝胶膜为萃取材料,利用自行组装的萃取装置,建立了一种基于电膜萃取法(electromembrane extraction,EME)快速提取奶酪中组胺的方法。在电场驱动力作用下,组胺阳离子经聚丙烯凝胶膜孔进入接受相溶液中,采用HPLC对萃取液进行分析。结果表明组胺富集倍数达到1.7倍,相对标准偏差(n=6)为1.41%~5.71%。该方法操作简单、成本低,能够满足组胺的快速分析需求,也为食品中其他无机化学危害物的提取与检测提供了新的方法与思路。A rapid histamine extraction method in cheese was established using a self-prepared electromembrane extraction(EME)instrument,in which a polyacrylamide gel was used as the extraction membrane.Driven by the force of the electric field,the histamine cation enters into the acceptor solution through the hole of polyacrylamide gel,and the extract was analyzed by the HPLC.The results showed that the enrichment factor of histamine reached 1.7 times with relative standard deviations(n=6)ranging from 1.41%to 5.71%.The method is simple in operation and low in cost,which can meet the demand of rapid detection of histamine,and also provides a new method for the extraction and detection of other inorganic chemical hazards in foods.
