摘  要:消费者对安全、无污染食品包装材料日益增长需要以及塑料包装废弃物对环境的破坏日趋严重,使得可食性包装材料的研发具有十分广阔的前景。但仅以单一的可食性材料(主要为多糖、蛋白质和脂质)为成膜基材的可食性膜在阻隔性能和力学性能等方面存在缺陷,极大地限制了可食性膜在食品包装中的应用。多糖、蛋白质和脂质具有不同特性,同时三者的分子间可以形成相互作用,将两种或两种以上可食性材料为成膜基材制备的复合膜可以改善单一膜的缺陷,实现优势互补,提高食品包装材料的综合性能。简单介绍了可食性复合膜的主要分类和制备方法,并重点分析了可食性复合膜在食品包装领域的应用与进展。With the increasing demand of consumers for safe and pollution-free food packaging materials and the increasingly serious damage of environment by plastic packaging waste,the research and development of edible packaging materials enjoys a broad prospect.However,the application of edible films based on single edible materials(mainly polysaccharides,proteins and lipids)in food packaging has been greatly limited due to their defects in barrier properties and mechanical properties.Polysaccharides,proteins and lipids have different characteristics,and the molecules of these three edible materials can interact with each other.The composite films prepared by using two or more edible materials as film-forming substrates can reduce the defects of a single film,make their respective advantages complementary to each other and improve the comprehensive performance of food packaging materials.This paper briefly introduced the main classification and the preparation methods of edible composite films.And it put emphasis on the analysis of the application and progress of edible composite films in food packaging.
