摘　　要：“孔府菜”是中华民族智慧的结晶,是众多民间、地方风味的集合体,是中国官府菜中传承历史最久远、风格独具一格、宴饮礼仪风俗与食馔体系完备、影响面最大的菜肴体系。目前孔府饮食文化未能充分地传承与发展,该文从“孔府菜”特色、科学饮食、礼食、食用与审美等文化内涵阐述孔府饮食文化传承,通过对政府、消费者、菜品设计、宣传与推广等方面进行分析来阐述孔府饮食文化发展策略。"Confucius cuisine"is the crystallization of the wisdom of the Chinese nation,a collection of many folk and local flavors,and a cuisine system with the longest history,unique style,complete banquet etiquette and catering system and the largest influence among Chinese official cuisine.At present,the catering culture of Confucius Mansion has not been fully inherited and developed.This paper expounds the inheritance of the catering culture of Confucius Mansion from the cultural connotation of"Confucius cuisine",scientific diet,ritual food,food and aesthetics,and expounds the development strategy of the catering culture of Confucius Mansion by analyzing the government,consumers,food design,publicity and promotion.
