摘　　要：玉米是重要的粮食作物之一,玉米的精深加工、副产物的综合利用及营养价值的全面开发越来越受到人们的关注。重点介绍了玉米的营养成分,国内外对玉米淀粉加工后的副产物玉米浆、玉米胚、玉米纤维和蛋白粉等的研究开发及应用现状,并对未来技术进步和行业发展做出展望,以期为促进玉米精深加工业快速、高质量发展提供参考。As an important food crop,the comprehensive application of deep processing and its by-products and development of its nutritive value of corn is getting more and more attention.This paper introduced the nutrition content of maize,the domestic and foreign research and development and application status of corn starch processed by-products such as corn syrup,corn germ,corn fiber and protein powders,as well as prospected the future technological progress and industry development,in order to provide reference for the rapid and high quality development of corn deep processing industry.
