摘 要:2020年春节前后,突如其来的新冠疫情给餐饮行业带来了严重的打击,许多餐饮企业陷入财务困境。文章以海底捞为例,分析疫情期间海底捞面临的财务困境及应对措施,并采用事件研究法和相关财务指标的变动检测海底捞应对措施是否有效。研究发现,疫情中海底捞应对财务困境的措施有一定的成效,其累计超额收益率为正数,偿债、营运、盈利和成长能力指标都显示出海底捞在疫情后经济效益的提升,由此提出针对疫情危机下企业的应对措施及改进方法,为餐饮企业提供经验借鉴。Around the Spring Festival in 2020,the sudden new crown epidemic has brought a serious blow to the catering industry,and many catering companies have fallen into financial difficulties.Taking Haidilao as an example,the article analyzes the financial difficulties and countermeasures faced by Haidilao during the epidemic,and uses the event study method and changes in relevant financial indicators to detect whether Haidilao's countermeasures are effective.The study found that Haidilao's measures to deal with financial difficulties during the epidemic had a certain effect,and its cumulative excess rate of return was positive.The indicators of debt repayment,operation,profitability and growth ability all showed the improvement of Haidilao's economic benefits after the epidemic.This paper proposes countermeasures and improvement methods for enterprises under the epidemic crisis,and provides experience and reference for catering enterprises.
