摘 要:为探讨金银花提取物与白油涂膜处理对不同品种鸡蛋的保鲜效果,分别采用白油单层涂膜、金银花提取物+白油双层涂膜的方式处理海兰褐、农金1号和农大5号蛋鸡所产的鸡蛋,鸡蛋置于30~35℃、相对湿度为65%~70%的高温高湿环境下贮藏21 d,其间每7 d测定一次感官指标、哈夫单位,评价鸡蛋的新鲜程度。结果表明:金银花提取物+白油双层涂膜处理效果显著优于白油单层处理组(P<0.05),在高温高湿环境下贮藏21 d后,3个不同品种鸡蛋感官无异味、无霉变,蛋内容物评分≥85,哈夫单位仍处于A级新鲜水平,可延长鸡蛋保鲜期14 d,不同品种鸡蛋哈夫单位无显著差异。说明金银花提取物+白油涂膜对不同品种鸡蛋均具有较好的保鲜作用。In order to explore the fresh-keeping effect of honeysuckle extract and white oil coating on eggs of different varieties,eggs produced by Hailan Brown,Nongjin one and Nongda five laying hens were treated with white oil single layer coating,honeysuckle extract+white oil double layer coating,respectively.The eggs were stored in a high temperature and humidity environment of 30~35℃and 65%~70%relative humidity for 21 days,during which the sensory indexes and Huff units were measured every 7 days,Evaluate the freshness of eggs.The results showed that the effect of honeysuckle extract+white oil double coating treatment group was significantly better than that of white oil single coating treatment group(P<0.05),after 21 days of storage in high temperature and humidity environment,the eggs of three different varieties have no odor and mildew.The score of egg contents was≥85,and the Huff unit was still at the level of Grade A freshness,which can extend the freshness of eggs for 14 days.There was no significant difference between the Huff units of eggs of different varieties.This shows that honeysuckle extract+white oil coating has a good fresh-keeping effect on eggs of different varieties.
