摘　　要：无抗养殖是家禽生产的发展趋势。酵母葡聚糖作为一种高效的抗病免疫调节剂,是一种来源于酵母细胞壁的功能性多聚糖,具有提高免疫力、抗菌、抗病毒、抗炎、抗感染和抗霉菌毒素等多种生物学功能。酵母葡聚糖功能强大,体外十分稳定,在消化道中不易被降解,迁移至靶细胞即可发挥作用,使其有潜力成为比较理想的抗生素替代产品。本文综述了酵母葡聚糖的结构特性、生物学功能及其在家禽上的应用研究进展,旨在为酵母葡聚糖在家禽生产中的进一步研究和应用提供参考。Antibiotic free breeding is the development trend of poultry production. Yeast glucan, as a functional polysaccharide derived from yeast cell wall,is an efficient disease resistance and immune regulator.It has many biological functions, such as improving immunity, antibacterial, antiviral, anti-inflammatory, anti infection and anti mycotoxin. Yeast glucan has powerful function and is very stable in vitro. It is not easy to be degraded in the digestive tract. It can play a role when it migrates to target cells, which makes it have the potential to become an ideal alternative antibiotic free product. This paper reviews the structural characteristics, biological functions and application of yeast glucan in poultry, in order to provide reference for the further research and application of yeast glucan in poultry production.
