摘 要:近年来中国肉制品及肉类预制菜的企业迅猛发展,市场竞争也越来越激烈。随着社会的发展,消费者将健康与安全放在首位,对饮食营养、安全、卫生与方便的要求越来越高。如何适应市场的变化与需求,促进肉类食品企业稳步、持续地发展,是许多中小企业所面临的新课题。本文着眼于肉制品及肉类预制菜的市场发展现状进行分析,从西式肉制品、中式酱卤产品、预制食材及预制菜肴等方面,通过对终端销售、电商渠道的持续跟踪调查,以及合作伙伴的走访与交流,综合参加各种展会与博览会,及业内同仁观点的思想碰撞,以肉制品及肉类预制菜企业该如何稳健发展及转型等相关问题为基础,提出了应对策略与展望,旨在为中小肉食品企业的转型升级提供思路参考。In recent years,the enterprises of meat products and prefabricated meat food in China had developed rapidly,and the market competition had become increasingly fierce.With the development of society,health and safety were put in the first place by consumers,and requirements of diet nutrition,safety,hygiene and convenience had become increasingly high.How to adapt to the changes and demands of the market,and it promoted the steady and sustainable development of meat food enterprises,and itwas a new topic faced by many small and medium-sized enterprises.The market development status of meat products and prefabricated meat food was emphatically analyzed.From the aspects of western meat products,Chinese sauced meat products,prefabricated ingredients and prefabricated dishes,through the continuous tracking and investigation of terminal sales,e-commerce channels,as well as the visits and exchanges of partners,comprehensive participation in various exhibitions and expositions,and the ideological collision of the views of colleagues in the industry,based on the relevant issuesof how meat products and prefabricated meat food enterprisesshould develop steadily and transform,coping strategies and prospects were put forward,and it provided reference for the transformation and upgrading of small and medium-sized meat food enterprises.
