摘  要:通过操作使用一种新型双通道集中供热式烘炉,并在盐焗鸡蛋和家禽肉制品中的实际应用,掌握了烘炉的主要功能和性能特点,利用热分布测试、烘干产品实验对产品烘干效果及其能耗作对比分析。结果表明:烘干工艺相同的情况下,使用普通型侧热式烘炉和双通道集热式烘炉干燥,产品的失水率波动范围有所不同;使用双通道集热式烘炉烘制的产品的失水率为17%~24%,使用普通型侧热式烘炉烘制的产品的失水率为18%~30%,双通道集热式烘炉烘制的产品的失水率波动范围比普通型侧热式烘炉烘制的产品的失水率要小,由此证明产品的均匀性更好。同时探讨了新型烘炉节能降耗的突出性和在食品加工企业的应用前景。Through the operation of a new type of dual-channel central heating oven and its practical application in salt-baked eggs and poultry meat products,the main functions and performance characteristics of the oven were mastered,and heat distribution test and drying product experiment were used,and the product drying effect and energy consumption were compared and analyzed.The results showed that under the same drying technology,the fluctuation range of water loss rate of the product was different,when the ordinary side heating oven and the dual-channel central heat oven were used for drying.The water loss rate of products baked by dual-channel central heat oven was 17%~24%,and the water loss rate of products baked by ordinary side heating oven was 18%~30%.The fluctuation range of the water loss rate of products baked bythe dual-channel central heat oven was smaller than that of products baked by ordinary side heating oven,and it proved that the uniformity of products was better.At the same time,the prominence of energy saving and consumption reduction of the new oven and its application prospect in food processing enterprises were discussed.
