摘  要:为了探明白果蛋白质和各氨基酸的含量在沙藏过程中的变化规律,为白果储存研究提供理论依据,以5个白果品种(泰兴4号,叶籽银杏,新村18号,长兴1号,长兴5号)为试验材料,进行沙藏试验,测定沙藏过程中粗蛋白含量及各氨基酸含量,分析蛋白质含量、各氨基酸含量与沙藏之间的相关性。结果表明,随着沙藏时间的增加,白果粗蛋白含量呈现出上升的趋势,而总氨基酸含量则表现为下降。就具体的氨基酸含量变化而言,绝大部分氨基酸的含量在沙藏期间呈现出波动式减少的规律;甲硫氨酸(Met)和丝氨酸(Ser)的含量则呈现出波动式增加的规律;特别是半胱氨酸(Cys)含量随沙藏时间的增加而增加,经150 d沙藏后提高至4.21倍,且其含量变化与储藏时间呈极显著正相关(ρ=0.798,P<0.01)。就品种而言,沙藏对叶籽银杏和长兴1号影响较小。综合结果表明,沙藏期间白果营养物质发生了显著转化,表现在其粗蛋白含量和氨基酸组成剧烈变化,且具有品种特异性,以叶籽银杏和长兴1号较稳定。The contents of protein and amino acids in ginkgo nuts during sand storage were investigated to provide a theoretical basis for the nut storage study.Five ginkgo cultivars(Taixing 4,Yezi yinxing,Xincun 18,Changxing 1 and Changxing 5)were selected as experimental materials.The crude protein content was determined by elemental analyzer.The amino acid profile was determined by automatic amino acid analyzer.And the correlation between protein content,amino acid profile and storage time was analyzed by statistical analysis techniques,including variation coefficient,Pearson correlation coefficient and principal component analysis.The results were shown that the crude protein content was generally increased during sand storage while the concentration of total amino acids was decreased.During the storage period,the concentration of almost all amino acids decreased in a fluctuation pattern,while the concentrations of methionine(Met)and serine(Ser)increased.It was worth noting that the concentration of cysteine(Cys)increased with increased storage time,resulting in a 4.21-fold increase after 150 d storage.And there was a significant positive correlation between the Cys concentration and storage time(ρ=0.798,P<0.01).Amongst these varieties,sand storage had lesser impacts on Yezi yinxing and Changxing 1.The crude protein content and amino acids profile of ginkgo nuts change dramatically during sand-storing period,suggesting the nutrients of ginkgo nuts have significantly changed.And amongst these five cultivars,Yezi yinxing and Changxing 1 are less sensitive to storage.
