摘　　要：柚子皮含有多种对人体健康有益的活性成分,例如精油、黄酮类化合物、果胶等,充分利用柚子皮资源,有利于改善环境和资源回收利用。因此,本文对柚子果皮中的精油、黄酮类化合物和柠檬苦素这三种主要活性成分的功效进行了综述,总结了柚皮精油的抗氧化和抗菌作用、类黄酮对胰脂肪酶的抑制作用和柠檬苦素的抗炎作用,以期为柚子皮在食品加工中的综合利用提供借鉴和参考。Pomelo peel contains a variety of active ingredients beneficial to human health, such as essential oil,flavonoids, pectin, etc. Making full use of pomelo peel resources is beneficial to improving environmentand recycling resources. Therefore, the effects of essential oil, flavonoids and limonin in pomelo peel were reviewed in this paper, and the antioxidant and antibacterial effects of essential oil, the inhibitory effect of flavonoids on pancreatic lipase and the anti-inflammatory effects of limonin were summarized, in order to provide reference for the comprehensive utilization of grapefruit peel resources.
