摘  要:本研究旨在评价加丽素红对海兰蛋鸡色泽和肉质营养品质的影响。试验将108只海兰蛋鸡分为3组,每组36只,设立一个对照组,两个剂量组,剂量组分别饲喂添加加丽素红80和8000 mg/kg的饲料。结果显示,加丽素红可显著提高鸡脚胫色泽RYCF值(P<0.05);对鸡体皮肤、肌肉、脂肪的红度a*、黄度b*值有显著提高作用(P<0.05),同时对鸡体肌肉、脂肪的亮度有显著降低作用(P<0.05);通过对水分、灰分、蛋白质、脂肪、氨基酸等营养指标及pH、嫩度、失水率的统计分析发现,加丽素红对上述指标无显著差异(P>0.05)。This study aims to investigate the effects of carophyll red on the color and nutritional quality of hy-line chicken.It would provide scientific evidence for the reasonably using carophyll red in animal husbandry.The present study was divided into three groups at random.36 Hyline chickens were selected as the control group,fed basic feeds alone,while two treatment group(s 36 Hyline chickens per group)were fed basic feeds with 80 mg/kg and 8000 mg/kg of carophyll red as low and high dose treatment groups,respectively.The results show that carophyll red could improve the color RYCF value of chicken shins(P<0.05),improve the red color(a*)and the yellow color(b*)of chicken skin,muscle,and fat(P<0.05),and reduce the light color(L*)of chicken muscle and fat(P<0.05).There were no significant differences(P>0.05)between the two treatment groups and the control group in the nutritional quality of chick,including moisture,ash,protein,fat,amino acids,pH,tenderness,and water loss.
