摘 要:试验旨在探索零余子对绵羊生长性能、屠宰性能及肉品质的影响。选取3~4月龄体况良好的杜湖公羊(杜泊羊♂×湖羊♀)30只,体重为25 kg左右,随机分为3组,每组10只羊,每组5个重复,每个重复2只羊。对照组(CTL组)饲喂普通日粮、低剂量组(BUL1组)饲喂含7.5%零余子的日粮、高剂量组(BUL2组)饲喂含10.0%零余子的日粮。正试期90 d,试验期间每月称重1次,测定生长性能;试验结束后,将试验羊屠宰,测定屠宰性能;采集试验羊背最长肌,测定肉品质。结果表明:日粮中添加零余子对绵羊的末重、增重、平均日增重(ADG)、平均日采食量(ADFI)无显著影响(P>0.05)。零余子组的大网膜重显著高于CTL组(P<0.05),零余子组的宰前活重、胴体重、屠宰率、肝指数、脾指数与CTL组相比差异不显著(P>0.05)。CTL组肌肉的pH45 min显著高于零余子组(P<0.05),但pH24 h、粗脂肪、干物质、粗蛋白、剪切力、失水率没有显著差异(P>0.05)。BUL2组的C22:0含量显著高于BUL1组(P<0.05),对肌肉中其他脂肪酸含量没有显著影响(P>0.05)。综上,零余子可作为绵羊育肥的饲料,适宜的添加剂量(7.5%~10.0%)在不影响绵羊的生长和屠宰性能的条件下,对绵羊的屠宰性能和脂肪酸组成有一定的影响。This experiment was conducted to explore the effects of bulbil on sheep growth performance,slaughter performance and meat quality.Thirty sheep(dorper sheep♂×hu sheep♀) aged three to four months with a body weight of about 25 kg were divided into three groups randomly,10 sheep in each group with five replicates and each replicate with two sheep.The control group(CTL group) was fed ordinary diet,the low-dose of bulbil group(BUL1 group) was fed 7.5%bulbil diet,and the high-dose bulbil group(BUL2 group) was fed 10.0%bulbil diet.The formal experiment lasted for 90 days.During the experiment,sheep weight was weighed once a month to measure the growth performance.In the end of the experiment,the sheep were slaughtered to determine the slaughter performance.Longissimus dorsi muscle was collected to detect meat quality.The results showed as follows:Dietary bulbil had no significant effects on final weight,total weight gain,average daily gain(ADG) and average daily feed intake(ADFI) of sheep(P>0.05).The omentum weight of bulbil group was significantly higher than that of CTL group(P<0.05),but the live weight before slaughter,carcass weight,slaughter rate,liver index and spleen index of bulbil group were not significantly different from those of CTL group(P>0.05).The p H value of muscle at 45 min(pH45 min) in CTL group was significantly higher than that in bulbil group(P<0.05),but there were no significant differences in pH24 h.Similar with the dry matter,crude fat,crude protein,shear force and water loss rate(P>0.05).The content of C22:0 in BUL2 group was significantly higher than that in BUL1 group(P<0.05),but there isn’t any significant effect on the contents of other fatty acids in muscle(P>0.05).In conclusion,besides effective feed value in production performance,bulbil has certain effect on slaughter performance and fatty acid content on sheep,the recommended proportion of bulbil was 7.5%-10.0% of diets.
