摘  要:目的探究一种能从茶叶中快捷、有效提取出茶多酚的办法。方法通过超声波辅助乙醇提取工艺和分光光度法对桐城小花茶中茶多酚进行提取和含量测定。在单因素实验基础上利用L 9(34)正交试验对乙醇浓度、料液比、超生次数和浸提温度4个参数条件进行优化,以期得到最佳提取工艺。结果正交实验结果显示,4因素对茶多酚取率影响大小依次为:浸提温度>超声次数>乙醇浓度>料液比;得到茶多酚优化提取工艺是以50%的乙醇为浸提液,料液比(g∶mL)为1∶30,温度为70℃浸提6min,超声功率与次数分别为100W和120次时为最佳。用该工艺参数得到的茶多酚提取率为15.62%。结论用超声波提取茶多酚省时便利,并且提取率高,适用于工业生产。Objective To explore a quick and effective method to extract the tea polyphenols from tea.Methods The extraction and determination of tea polyphenols in Tongcheng Xiaohua tea were carried out with ultrasonic-assisted ethanol and spectrophotometer.In order to obtain the best extraction process,L 9(34)orthogonal experiment was used to optimize the four parameters of ethanol concentration,material-to-liquid ratio,number of differentials and extraction temperature on the basis of single-factor experiment.Results The results of orthogonal test showed that the four factors affected the extraction rate of tea polyphenols in the order of extraction temperature>ultrasonic frequency>alcohol concentration>ratio of material to liquid,and the best qualifications for the optimized extraction process of tea polyphenols were the extracting liquor of 50%ethanol,the ratio of liquid to material liquid(g∶mL)of 1∶30,the extracting temperature of 70℃for 6min,and the ultrasonic power of 100W and the frequency of 120 times respectively.The extraction rate of tea polyphenols obtained with these process parameters was 15.62%.Conclusion Ultrasonic extraction of tea polyphenols,with a high extraction rat,is convenient and suitable for industrial production.
