摘 要:旨在探索一种快速准确地划分大白菜叶脉中花青素含量的方法。以自主创制的紫色叶脉散叶大白菜为研究材料,利用pH示差法对其紫色、浅紫色和白色叶脉单位质量花青素含量进行测量,结果表明不同颜色叶脉花青素含量存在显著差异,其含量分别为78.480 mg·kg^(-1)、16.703 mg·kg^(-1)和1.993 mg·kg^(-1)。用色差计对3种叶脉的色差值进行测定,结果表明色差值L^(*)、a^(*)、b^(*)变化规律与人眼观察到的颜色变化趋势基本一致,且与花青素含量有相关关系,相关系数分别为0.8917、0.7979、0.8917。此外,对L^(*)、a^(*)、b^(*)值显著性差异分析发现,3种颜色叶脉的L^(*)、a^(*)、b^(*)值均存在显著性差异,其中L^(*)值的差异最大,紫色叶脉和浅紫色叶脉、浅紫色叶脉和白色叶脉的L^(*)值边界间隔分别是10.446和4.357,3种颜色叶脉区分明显,以此作为判断紫色、浅紫色和白色3种不同颜色叶脉的色差值参数标准,可为大白菜叶脉花青素紫色程度判断提供一种新的快速检测方法。In order to establish for rapid and accurate method for determination of purple degree in loose leaf Chinese cabbage with purple veins.With loose leaf Chinese cabbage as the test material,the unit anthocyanin of purple veins,light purple veins and white veins were determined.The results showed that the anthocyanin content in different colors of veins was significantly different,the content were 78.480 mg·kg^(-1),16.703 mg·kg^(-1)and 1.993 mg·kg^(-1).Furthermore,different colors of the veins were measured by the Chromatic meter.The results showed that the change rule of Chroma value L^(*),a^(*),b^(*)was the same as the changes observed by human eyes,and there was a very significant correlation between anthocyanin content and chromatic meter,the correlation coefficient were 0.8917,0.7979,0.8917,respectively.In addition,after analysis of significant Chroma value L^(*),a^(*),b^(*),we found that the Chroma value of were significant differences,which the difference in L^(*)value was the largest.The interval between the L^(*)value boundary of purple and white veins was 10.446,light purple and white veins was 4.357,which can be a parameter standard for distinguishing the veins of three different colors,and can provide a new and rapid method for judging the purple degree of anthocyanin in the veins of Chinese cabbage.
