摘 要:目的:探讨日本鸡蛋消费动向与消费需求状况,分析日本以消费者需求为导向的产业政策机制与扩大消费策略,为我国蛋鸡产业发展提供借鉴。方法:通过对日本蛋鸡产业政策机制、行业数据、消费者调研等报告以及行业实践的分析,结合我国发展实际提出建议。结果:日本鸡蛋需求呈平稳增长趋势;加工用途需求占比大,消费受季节和疫情影响较大;安全、安心、高品质的鸡蛋需求多元化。日本积极推进完善HACCP管理、可追溯制度等食品安全制度建立的同时,配套法律规范进行约束;制定完善蛋鸡改良增殖目标,注重特色品牌种鸡研发创新、权威认证以及品牌化建设;将食育教育纳入鸡蛋消费教育,建立有效沟通传播平台,扩大了鸡蛋消费。结论:建议我国建立覆盖全产业链的行业标准体系与实施指南,配套法律规范;提高全智能化蛋品加工技术,提高蛋品质量和加工水平;深入洞察消费者需求,差异化战略推进品牌化建设;开展鸡蛋消费教育,建立与消费者的沟通传播平台。【Objective】 To discuss the trend and demand of egg consumption in Japan, and analyze the industrial policy mechanism oriented by consumer demand and the strategy of expanding consumption in Japan, so as to provide reference for the development of egg industry in China.【Method】 Based on the analysis of industrial policy mechanism, industrial data, consumer survey and industry practice of egg in Japan, some suggestions combined with the actual conditions of China were put forward.【Result】 Demand for eggs in Japan is growing steadily, processing demand accounted for a large proportion of it.The consumption of egg is deeply affected by the season and epidemic.The demand of safe, secure, high-quality eggs is diversified.While Japan actively promotes the establishment of food safety systems such as HACCP management and traceability systems, it also imposes restrictions by supporting laws and regulations.Japan sets targets for the improvement and multiplication of eggs, and emphasizes the research and development innovation, authority certification and brand construction of special breeding chickens.It also brings food education into the education of egg consumption, establishing an effective communication platform.All these efforts expand egg consumption.【Conclusion】 It is suggested that China should establish an industry standard system and implement guidelines covering the whole industry chain and completing with laws and regulations.China also need improve the fully intelligent egg processing technology and the egg’s quality and egg processing level.Deeply observing the needs of consumers, promoting the brand construction by the differentiation strategy, developing the egg consumption education and establishing the communication platform with the consumer are also the things China needs to do.
