摘  要:本研究优化甘麦大枣复合饮料制备工艺,制备甘麦大枣复合饮料,对其抗疲劳、缓解抑郁作用进行研究。通过单因素试验及正交试验优化甘麦大枣药液提取工艺及甘麦大枣复合饮料制备工艺,通过小鼠悬尾实验、强迫游泳实验和拮抗利血平实验对甘麦大枣复合饮料抗疲劳及缓解抑郁作用进行研究,单因素及正交试验结果表明,甘麦大枣药液最佳提取工艺为加水量300 m L,提取温度为60℃,提取次数为3,每次提取60 min;甘麦大枣复合饮料最佳制备工艺为将药液稀释5倍,甜味剂添加量为3%,防腐剂添加量为0.1%;动物实验结果表明甘麦大枣复合饮料可以有效缩短小鼠悬尾不动时间和累计游泳不动时间;拮抗利血平实验结果表明甘麦大枣复合饮料能够提高小鼠肛温、降低小鼠眼睑下垂率及提高小鼠出圈率。本研究优选工艺制备的甘麦大枣复合饮料口感醇香,风味天然,酸甜适中,饮料呈均匀澄清的橘黄色,稳定性良好,能够起到一定抗疲劳及缓解抑郁作用。The study aims to optimize the preparation technology of Ganmai Jujube compound beverage, prepare Ganmai Jujube compound beverage, and study its anti-fatigue and anti-depression effects. The extraction technology of Ganmai Jujube liquid medicine and the preparation technology of Ganmai Jujube compound beverage were optimized by the single factor experiment and orthogonal experiment. The anti-fatigue and anti-depression effects of Ganmai Jujube compound beverage were studied by tail suspension test in mice, swimming test in mice and reserpine antagonism test. The results of the single factor and orthogonal experiment showed that the best extraction process of Ganmai Jujube liquid medicine was as follows, water 300 mL, extraction temperature was 60 ℃, extraction 3 times, and each extraction time was 60 min;The optimum preparation process of Ganmai Jujube compound beverage was as follows, the dilution ratio of medicinal liquid was 5, the amount of sweetener was 3%, and the amount of preservative was 0.1%. The Ganmai Jujube compound beverage can effectively reduce the immobility time of mouse tail suspension and the immobility time of mouse swimming. The experimental results of antagonism reserpine showed that the Ganmai Jujube compound beverage can increase the anal temperature and the circle-shedding rate of mice, reduce the eyelid drooping rate of mice. The compound beverage of Ganmai Jujube prepared by the optimized process in this study had mellow taste, natural flavor, moderate sweet and sour taste, uniform and clear orange color and good stability, which could play a certain role in relieving fatigue and relieving depression.
