摘 要:【目的】分析加热卷烟专用稠浆法薄片与烟叶原料香气成分释放的差异,为加热卷烟的增香配方提供技术支撑。【方法】采用顶空固相微萃取-气相色谱质谱联用技术(HS-SPME-GC/MS)对加热卷烟专用稠浆法薄片与烟叶原料进行半定量分析,先优化HS-SPME-GC/MS的萃取条件,再通过香气活力值(OAV)确定其特征香气成分并进行聚类分析。【结果】确定优化的萃取条件为0.20 g样品量,在90℃下用50/30μm DVB/CAR/PDMS纤维萃取头萃取45 min,解吸3 min。从加热卷烟专用稠浆法薄片与烟叶原料中共检测出76种香气成分,其中醇类9种、醛酮类26种、酚类3种、酯类16种、杂环化合物类10种、有机酸类5种和烃类7种。OAV分析结果表明,大马酮、香叶基丙酮、β-紫罗酮、甲基庚烯酮、烟碱、4-乙基愈创木酚、丁香酚、亚麻酸、棕榈酸甲酯、γ-十一内酯等成分在加热卷烟专用稠浆法薄片与烟叶原料中构成特征香气成分。聚类分析表明,加热卷烟专用稠浆法薄片与烟叶原料香气成分的释放具有明显差异。【结论】加热卷烟专用稠浆法薄片与烟叶原料释放的香气成分在种类与含量上具有较大差异,其可为烟草薄片丰富香气成分的配方设计提供技术支持。【Objective】The difference in aroma components of slurry sheet and raw materials of reconstituted tobacco was investigated to support the development of heated tobacco products(HTP)with di-fferent flavors.【Method】The volatile components of heated tobacco products special slurry processed reconstituted tobacco(SPRT)and its raw materials were determined by headspace-solid phase microextraction-gas chromatograph/mass spectrometer(HS-SPME-GC/MS).The extraction conditions of HS-SPME-GC/MS were optimized.Then,the characteristic aroma components were determined by odor activity value(OAV),and the cluster analysis was performed.【Result】The optimized experimental conditions included 0.20 g sample volume,50/30μm DVB/CAR/PDMS fiber extraction head at 90℃,45 min extraction time and 3 min for resolution time.A total of 76 volatile compounds were detected in SPRT and its raw materials,including 9 alcohols,26 aldehydes and ketones,3 phenols,16 esters,10 hydrocarbons,5 organic acids and 7 alkenes.The OAV results showed that the characteristic aroma components included trans-β-damascenone,geranylacetone,β-ionone,6-methyl-5-hepten-2-one,(S)-3-(1-methyl-2-pyrrolidinyl)-pyridine,2-methoxy-4-vinylphenol,eugenol,(Z,Z,Z)-9,12,15-octadecatrienoic acid,hexadecanoic acid methyl ester,and 5-heptyldihydro-2(3H)-furanone.Cluster analysis showed that there were clear differences in aroma components between SPRT and its raw materials.【Conclusion】There were differences in types and contents of aroma components released between SPRT and its raw materials,which can provide support for the formulation design of rich aroma components.
