摘  要:专业课程教学融入课程思政是顺应时代发展,落实高等教育“立德树人”根本任务的重要举措。“烹饪原料学”是烹饪工艺与营养专业核心课程,将课程思政融入专业教学对学生思想政治素养的培养具有重要作用。文章基于“大思政”理念,针对“烹饪原料学”中“谷类原料”子模块的知识目标、能力目标和素质目标,挖掘课程思政元素,构建谷类原料思政教学总体框架,设计典型思政案例融入课前、课中和课后以及实践各个环节,实现立德树人的教学目标,为相关课程思政建设提供借鉴和参考。Integrating moral education into the teaching of professional courses is an important strategic measure to keep up with the development of the times and implement the fundamental task of“fostering integrity and promoting rounded development of people”in higher education.“Cooking Ingredients”is the core course of cooking technology and nutrition specialty.Integrating moral education into professional teaching plays an important role in fostering the students’integrity.Based on the concept of“greater moral education”and aiming at the knowledge goal,ability goal and quality goal of the sub-module of“cereal raw materials”in“Cooking Ingredients”,this paper excavated the moral elements of the course,constructed the overall framework of the moral teaching of cereal raw materials,and designed typical ideological cases and integrate them into each of the three stages of pre-class,in-class and after-class learning and practice,so as to realize the teaching goal of fostering integrity and cultivating talents.Hopefully,the experience gained may provide a reference for integrating moral education in other related courses.
