摘  要:以霍山石斛与百香果为原料,进行复合饮料的工艺优化和抗运动疲劳研究。通过单因素和响应面试验优化霍山石斛与百香果复合饮料的工艺条件并建立小鼠负重力竭游泳模型,来研究复合饮料对小鼠负重游泳力竭时间、血乳酸和血清尿素氮等指标的影响,评价复合饮料的抗运动疲劳效果。结果表明,霍山石斛百香果复合饮料的最佳工艺条件为霍山石斛汁与水的料液比1∶20(g/mL),百香果汁添加量为10.89%,白砂糖添加量为6.50%,黄原胶添加量为0.08%,在此条件下感官评分得分为88.81±0.15。动物实验结果表明,复合饮料的不同剂量组(低、中、高)能显著提高小鼠负重力竭游泳时间(p <0.05),抑制小鼠体内血乳酸和血清尿素氮的积累,增加小鼠运动负荷和耐力(p <0.05),并呈现剂量量效关系,表明霍山石斛百香果复合饮料对小鼠具有一定的抗运动疲劳作用。The Dendrobium huoshanense and passion fruit were used as raw materials. The technology optimization and anti-fatigue effect of compound beverage were studied. Single factor and response surface methods were used to optimize the processing conditions of the compound beverage of Dendrobium huoshanense and passion fruit,and the mice load-bearing exhaustive swimming model was established to study the effects of the compound beverage on the mice load-bearing swimming exhaustion time,blood lactic acid and serum urea nitrogen,and to evaluate the anti-fatigue effect of the compound beverage. The results showed that the optimum technological conditions for the compound beverage of Dendrobium huoshanense and passion fruit were as follows :the ratio of Dendrobium huoshanense juice to water was 1∶20(g/mL),the addition of passion fruit juice was 10.89%,the addition of sucrose was 6.50%,and the addition of xanthan gum was 0.08%. Under these conditions,the sensory score was 88.81±0.15. The results of animal experiments showed that,the different dosage groups(low,medium and high)of the compound beverage could significantly increase the swimming time of mice under load exhaustion(P <0.05),inhibit the accumulation of blood lactic acid and serum urea nitrogen in mice,increase the exercise load and endurance of mice(P < 0.05),and showed a dose-response relationship. It showed that the compound beverage of Dendrobium huoshanense and passion fruit had a certain anti-fatigue effect on mice.
