摘  要:选用8种天然抗氧化剂及2种抗氧化增效剂,通过多次优化筛选出协同性能高的抗氧化剂与抗氧化增效剂复配工艺,抗氧化效果由大到小为叔丁基对苯二酚(TBHQ)+L-抗坏血酸棕榈酸酯(AP)+硫代二丙酸双十二烷酯(DLTP)>TBHQ+AP+柠檬酸(CA)>TBHQ+AP>TBHQ>TBHQ+N-苯乙酰基-L-谷氨酰胺(PG)>空白(CK)。TBHQ+AP+DLTP是最佳的复配工艺,将氧化诱导时间延长了3.5倍。文章系统研究了多种抗氧化剂在水溶性大蒜油中的协同和拮抗作用,并采用GC-MS检测了大蒜油的主要成分和所占比例。该研究解决了大蒜油行业中水溶性大蒜油储存难的问题,为日后抗氧化剂在硫醚类化合物中协同增效配方的筛选提供了依据。Eight natural antioxidants and two antioxidation synergistic agents are selected,and the combination process of antioxidants and antioxidation synergistic agents with high synergistic performance is selected through multiple optimization.The antioxidant effects are as follows:tertbutylhydroquinone(TBHQ)+L-ascorbic palmitate(AP)+dilauryl thiodipropionate(DLTP)>TBHQ+AP+citric acid(CA)>TBHQ+AP>TBHQ>TBHQ+N-phenylacetyl-L-glutamine(PG)>CK.TBHQ+AP+DLTP is the best combination process,which prolongs the oxidation induction time by 3.5 times.In this paper,the synergistic and antagonistic effects of various antioxidants in water-soluble garlic oil are systematically studied,and the main components and their proportions of garlic oil are detected by GC-MS.This study has solved the problem of difficult storage of water-soluble garlic oil in garlic oil industry and provided a basis for the formula screening of synergistic effects of antioxidants in thioether compounds in the future.
