摘 要:为研究套袋‘瑞雪’苹果果皮不同部位褐变的差异,明确‘瑞雪’苹果褐变发生原因,作者以套袋‘瑞雪’苹果为试材,于采收期调查果实不同部位(梗洼部、胴部、萼洼部)的褐变率,测定不同部位生理指标和观察细胞结构,探寻苹果果皮不同部位褐变的差异性。结果显示,‘瑞雪’苹果果实各部位的褐变率,梗洼部最高(63.0%),萼洼部最低(23.5%),胴部居中(35.0%)。电子显微镜下观察到褐变果各部位果皮细胞结构受损程度均高于未褐变果,褐变果梗洼细胞受损最重,萼洼则最轻。全钙含量、PPO活性和POD活性与‘瑞雪’苹果褐变关系密切。In order to study the difference of browning in different parts of bagged ’Ruixue’ apple peel,and determine the cause of browning in ’Ruixue’ apple,the author used bagged ’Ruixue’ apple as the test material to investigate the browning rate in different parts of the fruit(stem cavity,cheeks,calyxend) during the harvest period,determine the physiological indicators and observe the cell structure of different parts,and explore the difference of browning in different parts of the apple peel.The results showed that the browning rate of each part of ’Ruixue’ apple fruit was the highest in the stem depression(63.0%),the lowest in the calyx depression(23.5%),and the middle in the carcass(35.0%).Under the electron microscope,it was observed that the damaged degree of the pericarp cell structure of the browning fruit was higher than that of the non browning fruit.The damaged degree of the cells in the stem depression of the browning fruit was the most serious,while the damaged degree of the calyx depression was the least.Total calcium content,PPO activity and POD activity were closely related to’Ruixue’ apple browning.
