摘  要:目的:建立同时测定猪血制品中苋菜红、新红、胭脂红、诱惑红4种色素的方法。方法:采用无水乙醇-氨水-水(7∶2∶1)提取,经旋涡振荡、超声、离心、浓缩、定容,用高效液相色谱法测定,二极管阵列为检测器,色谱柱为C18柱(250 mm×4.6mm,5μm),流动相为0.02 mol·L^(-1)乙酸铵-甲醇,梯度洗脱,检测波长为510 nm。结果:苋菜红、新红、胭脂红、诱惑红在0.1~100.0μg·mL^(-1)线性关系良好,相关系数均为1.000 0。检出限均为0.05 mg·kg-1,平均加标回收率为81%~102%。结论:本方法灵敏度高,分离效果好,结果稳定可靠,适用于猪血产品中苋菜红、新红、胭脂红、诱惑红的测定。Objective: To establish a method for simultaneous determination of amaranth, new red, carmine red and temptation red in pig blood products. Method: Aqueous ethanol-ammonium-water(7 ∶ 2 ∶ 1) extraction was performed by vortex oscillation, ultrasound, centrifugation, concentration and constant volume. The determination was performed by high performance liquid chromatography(HPLC) with diode array as detector. The determination was performed on C18column(250 mm×4.6 mm, 5 μm) with 0.02 mol·L^(-1)ammonium acetate-methanol gradient elution as mobile phase. The detection wavelength was 510 nm. Result: Amaranth, new red, carmine red and temptation red had good linearity in 0.1 ~ 100.0 μg·mL^(-1), and the correlation coefficients were all 1.000 0. The limits of detection were 0.05 mg·kg-1, the average recoveries were 81% ~ 102%. Conclusion: The method has high sensitivity, good separation effect, stable and reliable results, and is suitable for the determination of amaranth red,new red, carmine red and temptation red in pig blood products.
