摘  要:为提高芝麻菜的开发,选取3种常见的芝麻菜种子为原料,探究火箭生菜、花叶芝麻菜、小叶芝麻菜3种种子油脂理化特征及抗氧化活性,采用索氏提取法提取种子油脂,参照国标对其理化性质指标进行评价。采用Folin-Ciocalteu法测定油脂中总酚含量;利用GC-MS法鉴定油脂组成并对3种脂肪酸成分进行分析;分析了3种油脂对1,1-二苯基-2-苦基苯肼(1,1-diphenyl-2-picrylhydrazyl,DPPH)和超氧阴离子自由基的清除率,并以此为评价指标研究3种油脂的体外抗氧化活性。结果表明:3种芝麻菜种子出油率在20%~35%范围内,油脂酸价均符合国家标准;除火箭生菜外其他两种油脂过氧化值均符合国家标准;3种油脂的碘值相差较大,火箭生菜为(151.67±7.09)g·100g^(-1),花叶芝麻菜为(99.67±1.97)g·100g^(-1),小叶芝麻菜为(43.23±3.76)g·100g^(-1)。总酚含量大小关系为:小叶芝麻菜>花叶芝麻菜>火箭生菜。3种油脂的主要组成成分为9种脂肪酸及2种植物甾醇,其中小叶芝麻菜种子油脂的必需脂肪酸含量最高,芥酸含量最低。此外,3种油脂清除超氧阴离子的IC_(50)分别为:火箭生菜12.662m·mL^(-1),小叶芝麻菜10.909mg·mL^(-1),花叶芝麻菜21.379mg·mL^(-1);清除DPPH自由基的IC_(50)为:火箭生菜0.297mg·mL^(-1)、小叶芝麻菜0.273mg·mL^(-1)、花叶芝麻菜0.682mg·mL^(-1)。该研究为芝麻菜的开发利用提供了一定的理论基础。In order to improve the development of arugula,three kinds of common arugula seeds were selected as raw materials to explore the physicochemical characteristics and antioxidant activity of seed oils of Arugula,Huaye and Xiaoye.The seed oil was extracted by Soxhlet extraction method,physical and chemical properties were evaluated with reference to national standards,the total phenol content in the oil was determined using Folin-Ciocalteu,oil composition was identified using GC-MS method,and the scavenging rates of DPPH and superoxide anion radical of three kinds of oils were studied.The experimental results show that,the oil yield of three kinds of Eruca sativa Mill seeds was in the range of 20%-35%,the acid value was within the scope of the national standard.Except for Arugula,the peroxide value of the other two oils was within the scope of the national standard.The iodine values of the three oils varied greatly,respectively(151.67±7.09)g·100g^(-1)(Arugula),(99.67±1.97)g·100g^(-1)(Huaye),(43.23±3.76)g·100g^(-1)(Xiaoye).The relationship of total phenol content was as follow:Xiaoye>Huaye>Arugula.The main components of three kinds of oil are 9 fatty acids and 2 phytosterols,and Xiaoye had the highest essential fatty acids and the lowest Arabidate acid.In addition,the superoxide anion scavenging IC_(50)of three kinds of oils are respectively:12.662mg·mL^(-1)(Arugula),10.909mg·mL^(-1)(Xiaoye),21.379mg·mL^(-1)(Huaye),the IC_(50)for DPPH radical clearance 0.297mg·mL^(-1)(Arugula),0.273mg·mL^(-1)(Xiaoye).This study provides a theoretical basis for the development and utilization of arugula.
