摘  要:随着中古丝绸之路的空前畅通与中外文明交流的日益频繁,唐都长安作为一座国际性的大都会和全国的政治、经济、文化中心,城市服务业非常发达,其中餐饮业尤其繁荣。长安的“胡店”、旗亭、酒肆、饭馆以及许多临街摆设的饮食摊点和沿街叫卖的游商小贩星罗棋布,胡汉兼容的烹饪技术和餐饮水平不断提高,形成了许多具有浓郁特色的菜肴和风味小吃。长安餐饮业的繁荣主要得益于胡汉饮食文化和南北餐饮习俗的相互影响与融合;另外,以胡汉食客共同构成的城市庞大消费群体也是支撑长安餐饮业繁荣的重要原因。With the unprecedented smoothness of the mid-ancient Silk Road and the increasingly frequent exchanges between Chinese and foreign civilizations, Chang’an, the capital of the Tang Dynasty, was an international metropolis and the political, economic, and cultural center of the country.The city’s service industry was very developed, and the catering industry was particularly prosperous.Chang’an’s “Hudian”,Qiting(a gate tower decorated with flags),tavern, restaurants, and many food stalls on the street and peddlers hawking along the street were scattered all over the place.The cooking technology and catering trade level compatible with Hu and Han were constantly improving, forming many dishes and snacks with strong characteristics.The prosperity of Chang’an’s catering industry is mainly due to the mutual influence and integration of Hu and Han dietetic culture and North-South catering customs;in addition, the huge urban consumer group composed of Hu and Han diners is also an important reason for supporting the prosperity of Chang’an’s catering industry.
