摘 要:目的 分析一起因农村家宴引起的食源性疾病暴发事件,查明传染来源、致病因子及其耐药性,有效防范此类事件的再次发生。方法 通过流行病学调查和实验室检验相结合的方式对这起事件进行调查分析。结果 此次暴发事件共搜索发现病例19例,均有共同就餐暴露史,无性别差异,临床表现以腹泻腹痛为主,流行病学调查研究发现,29日中餐食用“炖猪肚”是导致本次事件的危险因素。实验室检测从5例病例肛拭子和刀具、砧板涂抹样以及碗涂抹样中分离出肠炎沙门菌,其中4例病例和2个环境样本沙门菌脉冲场凝胶电泳(PFGE)图谱同源性为100%,且均具多重耐药性。结论 此次事件为一起肠炎沙门菌污染餐具导致的食源性疾病暴发事件,建议加大农村宴席食品安全宣传和监管力度,规范食品加工、餐具消毒措施。Objective This paper aims to analyze an outbreak of foodborne disease caused by a rural family banquet, identify the source of infection, pathogenic factors and drug resistance, and effectively prevent the recurrence of such events. Methods The incident was investigated and analyzed through the combination of epidemiological investigation and laboratory test. Results A total of 19 cases were found in this outbreak. All of them had a common dining exposure history, and there was no gender difference. The clinical manifestations were mainly diarrhea and abdominal pain. Epidemiological investigation found that eating “stewed pork belly” at lunch on the 29thwas the risk factor leading to this incident. Salmonella enteritidis was isolated from 5 patient’s anal swabs, knives, anvil smears and bowl smears. The homology of pulsed field gel electrophoresis(PFGE) patterns of Salmonella in 4 patients and 2 environmental samples was 100%, and they all had multiple drug resistance. Conclusion This event is an outbreak of foodborne disease caused by Salmonella enteritidis contaminating tableware. It is recommended to strengthen the publicity and supervision of food safety at rural banquets and standardize food processing and tableware disinfection measures.
