摘  要:探讨干法工艺中特殊医学用途全营养配方食品运输试验实施的方法。通过长距离运输试验,以罐装产品上、中、下3层多种营养素的均匀度为考察指标,探讨运输过程中均匀性的变化;同时通过实验室模拟装卸和运输过程,以包装破损情况、产品气密性为考察指标,评估包材的防护性能,以均匀度为考察指标,探讨模拟运输实施过程的可行性。结果显示,长距离运输和模拟运输后产品的维生素C、铜、锰、铁、钙的均匀度均≥90%。跌落试验、滚动试验和静载荷堆码试验结果表明,包材的防护性能较好,产品气密性均良好。实验室模拟实际运输过程具有可行性。Explore the method of carrying out the transportation experiment of whole nutritional formula food for special medical purpose in dry process.Through the long-distance transportation test,the uniformity of various nutrients in the upper,middle and lower layers of the canned product was used as the inspection index to explore the uniformity change during transportation.The air tightness of the product was used as the inspection index to evaluate the protective performance of the packaging material,and the uniformity was used as the inspection index to explore the feasibility of simulating the implementation process of transportation.The results showed that the uniformity of vitamin C,copper,manganese,iron and calcium of the products after long-distance transportation and simulated transportation was all≥90%.The results of drop test,rolling test and static load stacking test showed that the protective performance and the air tightness of the packaging material were good.It was feasible to simulate the actual transportation process in the laboratory.
