摘 要:表面活性剂是一种性能优异的合成材料,被广泛应用于工业生产、食品加工、医药制造、日用化工等领域。表面活性剂通常为阴离子和非离子两类,其作用机理不同于普通油脂所用的极性,是通过与脂肪酶的表面结合而起到乳化去污的作用。在生物催化中,表面活性剂的作用是将阴离子和非离子两类物质以静电或氢键相互作用形成一个复合体,以达到增强或降低催化活性的目的。生物催化中,往往通过模拟酶与反应底物分子之间相互作用而提高其活性,以实现更好的催化效果。表面活性剂可以与生物体内酶结合后进行催化反应,从而达到提高脂肪酶活力和生产效率的目的。目前已有大量研究表明生物催化剂对表面活性剂在生物反应过程中作用和机理与普通溶剂或常规油脂体系中所用溶剂所起作用是不同的。Surfactant is a kind of synthetic material with excellent performance,which is widely used in industrial production,food processing,pharmaceutical manufacturing,daily chemical and other fi elds.Surfactants are usually anionic and nonionic.Their mechanism of action is diff erent from the polarity used in ordinary oils and fats.They play the role of emulsifi cation and decontamination by combining with the surface of lipase.In biocatalysis,the function of surfactant is to form a complex of anionic and nonionic substances by electrostatic or hydrogen bonding interaction to enhance or reduce the catalytic activity.In biocatalysis,people often improve their activity by simulating the interaction between enzyme and reaction substrate molecules to achieve better catalytic eff ect.Surfactants can combine with enzymes in organisms to carry out catalytic reaction,so as to improve lipase activity and production effi ciency.At present,a large number of studies have shown that the eff ect and mechanism of biocatalyst on surfactant in biological reaction process is diff erent from that of common solvent or solvent used in conventional oil system.
