摘  要:文章主要探究了黄曲霉毒素B_(1)(AFB_(1))的毒性位点及毒性机理,并对比了微生物法破坏AFB_(1)毒性位点从而降解AFB_(1)的优势。重点综述了微生物法中的脱毒酶法对AFB_(1)的降解机制。同时,对脱毒酶法联合其他方法的复合应用进行展望。The toxicity sites and toxicity mechanism of aflatoxin B_(1)(AFB_(1))were explored in this study,and aiming at the toxicity sites of AFB 1,the advantages of microbial degradation of AFB_(1)were compared.Then the degradation mechanism of AFB_(1)by detoxifying enzyme method in microbial method was reviewed.Moreover,the composite application of detoxification enzyme method combined with other methods is prospected.
