摘  要:虾青素是一种高价值的酮类胡萝卜素色素,也是鲑鱼和甲壳类动物中的主要类胡萝卜素。在水产养殖中,虾青素对水生动物最明显的影响是红黄色素的沉着,因此经常用作添加剂以改善水生动物的品相,提高水产品质量。此外,虾青素还可提高水生动物的生长性能、繁殖能力、免疫力、抗胁迫和抗病能力等。本文介绍虾青素的化学结构与来源,综述近年虾青素在虾蟹养殖中的应用研究进展,以期为虾青素的实际应用提供一定的参考。Astaxanthin is a high value ketone carotenoid pigment,and is considered to be the main carotenoid in salmon and crustaceans.In aquaculture,astaxanthin's most obvious effect on aquatic animals is the stabilization of red and yellow pigments,so it is often used as additives to improve the quality of aquatic animals.In addition,astaxanthin can improve the growth performance,reproductive capacity,immunity,stress resistance and disease resistance of aquatic animals.In this paper,the chemical structure and source of astaxanthin were introduced,and the application of astaxanthin in shrimp and crab culture was reviewed,in order to provide some reference for the practical application of astaxanthin.
