摘　　要：本文综述了海、淡水野生和养殖鱼类群体肌肉的常规营养成分、脂肪酸和氨基酸种类组成与含量、矿物质组成和含量的特性及差异,分析其营养品质,为健康养殖技术升级及其饲料的研发提供基础资料和理论依据。The differences in contents of approximate nutrients, composition and contents of minerals, amino acid and fatty acids and texture characteristics are viewed between wild and cultured fishes, and their nutritional quality is evaluated to provide basic information and theoretical basis for upgrading healthy breeding technology and feed research and development.
