摘  要:中华传统文化的发展与传承中,饮食文化是极其重要的且拥有厚重的历史。文化是民族5000多年文明进程发展延传的精髓,而饮食文化是其中流淌的血脉,在中华传统文化5000多年的传承中,饮食文化贯穿其中。古语“民以食为天”体现了饮食文化的基础性地位。饮食文化见证了社会的发展、历史朝代的更迭,记录了不同时期、不同地域人们的生活习俗与特征。饮食文化的传承与发展,有助于中华优秀传统文化的弘扬与发展,也是提高综合国力的软实力、实现文化自信的必要条件。该文运用多元文化理论,采用问卷调查法,探讨民族饮食文化的嬗变,以拉萨地区藏餐馆为对象进行调查,研究发现传统藏族饮食文化已经发生了嬗变,饮食文化的保护与传承需要政府和社会多方面的支持。In the development and inheritance of traditional Chinese culture,dietary culture is extremely important and has a profound history.Culture is the essence of the development and inheritance of a nation's civilization for more than 5000 years,and dietary culture is the blood flowing through it.In the inheritance of Chinese traditional culture for more than 5000 years,dietary culture runs through it.The ancient saying"food is the essence of the people"reflects the fundamental position of dietary culture.Dietetic culture has witnessed the development of society and the change of historical dynasties,recording the living customs and characteristics of people in different periods and regions.The inheritance and development of dietary culture is conducive to the promotion and development of excellent traditional Chinese culture,and is also a necessary condition for improving the soft power of comprehensive national strength and achieving cultural self-confidence.This article uses the multicultural theory and the questionnaire survey method to explore the evolution of ethnic dietary culture.Taking Tibetan restaurants in Lhasa as an example,the study found that the traditional Tibetan dietary culture has undergone changes,and the protection and inheritance of dietary culture requires support from various aspects of the government and society.
