摘  要:目的:ε-聚赖氨酸-壳聚糖-PLA复合保鲜膜对葡萄穗果保鲜效果的影响。方法:以夏黑葡萄为原料,采用2种不同组成的ε-聚赖氨酸-壳聚糖-PLA复合保鲜膜制袋包装夏黑葡萄穗果,并以纯PLA薄膜制袋包装的葡萄穗果作为空白对照,于4℃环境下贮藏,每隔2d测定各项保鲜指标,比较不同处理组葡萄穗果品质的变化情况。结果:ε-聚赖氨酸-壳聚糖-PLA复合保鲜膜可以改善葡萄穗果的贮藏品质和硬度,降低葡萄穗果失重率、腐烂率,减缓Vc含量的流失。结论:ε-聚赖氨酸-壳聚糖-PLA复合保鲜膜能够有效改善夏黑葡萄穗果的贮藏品质。To investigate the effect ofε-polylysine-chitosan-PLA film on the preservation of grape panicle fruits,summer black grapes were packaged with two differentε-polylysine-chitosan-PLA composite preservative films,and the grapes packaged with pure PLA film were used as a blank control.All groups were stored at 4℃,and measured every 2 days in order to compare the changes in main quality factors of grapes quality in different groups.The results showed thatε-Polylysine-chitosan-PLA composite film can improve the storage quality and hardness of grapes,reduce the weight loss rate and decay rate of grapes,and slow down the loss of Vc content.
