摘 要:针对传统脉冲电场处理室结构难以对大量流动的液体食品进行高效处理的问题,通过对传统同轴型结构加以改进,设计一个具有多电极结构的处理室。经合理选材制作出有效容积达到8 L的处理室样机,并采用双因素正交法对酵母溶液进行灭菌试验,结果表明:处理室的灭菌效率与施加的外电压和脉冲个数呈正相关,在2500个24 kV的高压脉冲作用下,处理室灭菌率达到90%以上,设计具有良好的电场和流场分布并具有较好的扩展性。研究为脉冲电场技术在实际规模化的生产应用提供参考。Effective processing of massive flowing liquid food was difficult to achieve in pulsed electric field treatment using traditional processing chamber structure.In order to solve this problem,a chamber with multiple electrodes was designed based on the evolution of traditional coaxial topology in the present study.A prototype of the proposed chamber,in which the volume of effective treatment region reached 8 liters,was constructed through reasonable material selection,and sterilization test was conducted on the yeast solution by two-factor orthogonal method.The results show that the sterilization efficiency of the treatment chamber is positively correlated with the applied external voltage and the number of the applied impulses.The sterilization efficiency of the proposed chamber reaches more than 90%when 2500 impulses with 24 kV external voltage were applied.The design has good electric field and flow field distribution and has better expandability.The study provides a reference for large-scale commercial application of pulsed electric field technology.
