摘 要:本研究旨在评估猴头菇(Hericium erinaceus)提取物的抗氧化和抗菌活性。通过带二极管阵列检测器的高效液相色谱法(HPLC-DAD)和气相色谱-质谱法(GC-MS)测定猴头菇中化学成分;通过抗氧化活性清除能力试验(DPPH)、自由基清除能力检测试剂盒(ABTS)和铁还原抗氧化能力(FRAP)测定猴头菇的抗氧化能力,并按照肉汤微稀释法以最小抑制浓度(minimum inhibitory concentration,MIC)和最小细菌浓度(minimum bacterial concentration,MBC)值测定抗菌性。结果显示,测定的样品在化学成分和生物活性方面存在差异。与干燥的组织相比,乙醇提取物中的化合物更为丰富。所分析的提取物中确定的化合物的含量受到用于提取的溶剂的影响。与水提取物和干燥的原料相比,乙醇提取物中这些物质的含量最高,特别是辛醇(969.71 mg/100 g)。同时,这种提取物显示出最强的抗氧化和抗菌活性。猴头菇样品在化学成分和生物活性方面有很大的不同。乙醇提取物确定的化合物的含量明显高于水提取物和原料,并且显示了最强的抗氧化和抗菌活性。The aim of this study was to evaluate the antioxidant and antimicrobial activities of extracts from the monkey head mushroom(Hericium erinaceus).The chemical composition of the mushroom was determined by high performance liquid chromatography(HPLC-DAD)with diode array detector and gas chromatography-mass spectrometry(GC-MS);the antioxidant activity of the mushroom was determined by antioxidant activity scavenging capacity(DPPH),free radical scavenging capacity test(ABTS)and ferric reducing antioxidant capacity(FRAP),and the antibacterial activity was determined by broth microdilution method with minimum inhibitory concentration(MIC)and minimum bacterial concentration(MBC)values.The antimicrobial activity was determined by the minimum inhibitory concentration(MIC)and the minimum bacterial concentration(MBC).The results showed that the samples assayed differed in terms of chemical composition and biological activity.The compounds were more abundant in the ethanol extracts compared to the dried tissues.The content of the compounds identified in the extracts analysed was influenced by the solvent used for extraction.Compared to the aqueous extract and the dried raw material,the ethanolic extract showed the highest content of these substances,especially octanol(969.71 mg/100 g).At the same time,this extract showed the strongest antioxidant and antibacterial activity.The monkey mushroom samples differed considerably in terms of chemical composition and biological activity.The ethanol extract identified compounds in significantly higher amounts than the aqueous extract and the raw material and showed the strongest antioxidant and antibacterial activity.
