发酵饲料对池塘养殖鲤鱼肌肉品质的影响

摘　　要：该研究以池塘养殖鲤(Cyprinus carpio)为研究对象,探讨发酵饲料对其肌肉品质的影响。试验选取平均体重为(332.0±10.0)g且体况良好的池塘鲤720尾,随机分为3组,对照组、试验Ⅰ组和试验Ⅱ组,每组240尾,分3个平行,每个平行80尾,对照组鲤直接饲喂基础饲料,试验Ⅰ组和试验Ⅱ组饲喂1‰和3‰浓度微生物菌剂发酵的基础饲料,整个饲喂周期为期60d。结果发现,试验Ⅱ组的鲤肌肉水分显著低于对照组(P<0.05);试验Ⅱ组的肌肉脂肪极显著地低于对照组(P<0.01),试验Ⅰ组肌肉脂肪含量显著的低于对照组(P<0.05);蛋白质含量试验Ⅱ组显著地高于对照组(P<0.05);灰分水平试验组和对照组没有存在显著性差别(P>0.05)。说明鲤肌肉品质饲喂3‰浓度微生物菌剂发酵饲料优于1‰浓度微生物菌剂发酵饲料,更优于没有发酵处理的饲料。This study was conducted to investigate the effect of fermented feed on the muscle quality of pond-raised carp(Cyprinus carpio).A total of 720 pond carp with an average body weight of(332.0±10.0)g and in good condition were randomly divided into three groups:control,test I and test II.240 carp were fed a basal diet directly in the control group,while test I and test II groups were fed a basal diet fermented with 1‰and 3‰microbial agents.The results showed that the carp muscle moisture was significantly lower in test group II than in the control group(P<0.05);muscle fat was significantly lower in test group II than in the control group(P<0.01),and muscle fat content was significantly lower in test group I than in the control group(P<0.05);protein content was significantly higher in test group II than in the control group(P<0.05);there was no significant difference in ash levels between test and control groups(P>0.05).There was no significant difference between the test group and the control group in ash content(P>0.05).It means that the muscle quality of carp was fed 3‰concentration of microbial fermented feed is better than that of 1‰concentration of microbial fermented feed and even better than that of feed without fermentation treatment.
