摘  要:苋属植物可食用,且是良好的青绿饲料,富含必需氨基酸、不饱和脂肪酸、膳食纤维、维生素、矿物质、酚酸等营养成分,具有抗氧化、抗炎、抗癌等作用。苋属植物不但可为机体提供均衡的营养,还具有一定的药用价值和饲用价值。目前已开展对苋属植物食用、药用和饲用功能的研究,但仍不够深入。该文主要针对已有苋属植物的研究进行综述,以期为苋属植物功能的全面深入探索和产品开发提供方向。Amaranthus is a highly nutritive plant,which is used as vegetables and gains,that rich in essential amino acids,unsaturated fatty acids,dietary fiber,vitamins,minerals,and phenolic acids.It has anti-oxidation,anti-inflammation,and anti-cancer effects.Amaranthus can not only provide balanced nutrition for the body,but also have certain medicinal and feeding values.Although studies on the edible,medicinal and feeding functions of Amaranthus have been carried out,they are still not in-depth enough.In this review,we summarized the previous studies on Amaranthus,in order to provide directions for the comprehensive and in-depth exploration of the functions of Amaranthus and the development of its products.
