摘  要:[目的]探究在养殖水体中添加微生态制剂和碳源在云斑尖塘鳢养殖生产中的应用效果,为改善云斑尖塘鳢养殖环境和肌肉品质提供基础数据。[方法]以葡萄糖为碳源,研究添加微生态制剂和碳源对云斑尖塘鳢生长、肌肉质构和营养组成、氨基酸、脂肪酸等营养成分的影响,并对其肌肉品质进行评价。[结果]在水体中添加微生态制剂和碳源显著促进了云斑尖塘鳢生长,增重率与对照组相比提高了25.19%;添加微生态制剂和碳源提高了云斑尖塘鳢肌肉中灰分含量,试验组比对照组提高了11.38%;显著降低了粗脂肪含量,试验组比对照组降低了39.74%;但对粗蛋白、水分含量和氨基酸组成与含量无显著影响(P>0.05);添加微生态制剂显著降低了云斑尖塘鳢肌肉中脂肪酸的含量(P<0.05),饱和脂肪酸与多不饱和脂肪酸均显著低于对照组(P<0.05),其中n-3系多不饱和脂肪酸差异最显著,降低了37.23%。[结论]在养殖水体中添加225 g/(hm^(2)·d)的微生态制剂和投喂饲料重量的1%葡萄糖可以促进云斑尖塘鳢的生长,降低云斑尖塘鳢肌肉中粗脂肪含量,增加粗灰分含量。[Objective]In order to study the effect of adding probiotics and carbon source in the culture water on growth performance and muscle quality of Oxyeleotris marmoratus,which would provide some basic data for improving the culture environment and muscle quality of O.marmoratus.[Method]In this study,with the glucose as carbon source,the growth,muscle texture and nutritional composition,amino acids,fatty acids and other nutritional components of O.marmoratus were determined.[Result]The results showed that adding probiotics and carbon source in culture water could promote the growth of O.marmoratus,and the weight gain rate increased by 25.19%compared with the control group.With adding probiotics and carbon source could increase the content of crude ash 11.38%,and could decrease the content of crude fat 39.74%,but had no significant effect on the composition and content of crude protein,moisture and amino acids(P>0.05).Adding the probiotics significantly reduced the content of fatty acids in the muscle of O.marmoratus(P<0.05),the saturated fatty acids and polyunsaturated fatty acids were significantly lower than those in the control group(P<0.05).Among them,the difference of polyunsaturated fatty acids in n-3 line was the most significant,reduced by 37.23%.[Conclusion]The results showed that the adding probiotics and carbon source in water could promote the growth of O.marmoratus,reduce the content of crude fat in its muscle and increase the content of crude ash.The addition amounts of probiotics and carbon source were 225 g/(hm^(2)·d)and 1%of total feed weight.
