摘　　要：宠物诱食剂是一种非营养性添加剂,可以刺激宠物的食欲,促进宠物进食。因此,诱食剂的风味对宠物食品的品质具有重要意义。文章总结了宠物诱食剂的种类、作用、制备以及适口性测试,综述了近年来有关宠物诱食剂风味分析的研究进展,重点阐述了诱食剂的特征风味化合物及形成途径,为开发强适口性的新型宠物诱食剂提供参考。Pet food attractants are non-nutritive additives that stimulate pets'appetite and promote their food intake.Therefore,the flavor effect of attractants is of great significance to quality of pet food.The article summarizes the types,functions,preparation and palatability testing of pet food attractants,reviews the research progress on flavor analysis of pet food attractants in recent years,focuses on elaborating the characteristic flavor compounds and formation pathways of attractants,providing a reference for developing novel and highly palatable pet food attractants.
