摘　　要：杏鲍菇是一种珍稀的药食两用真菌,多糖是其主要活性物质,具有多种生理活性。以近年来国内外发表的文献为依据,总结和梳理杏鲍菇多糖在免疫调节、抗肿瘤、抗氧化、抗疲劳、降血糖、降血脂、抑菌、促进肠道菌群生态平衡、抗炎、抗病毒、保湿等方面的研究进展,提出杏鲍菇多糖未来的研究方向。Pleurotus eryngii is a kind of rare fungus used for both medicine and food.Polysaccharides is the main active substance of Pleurotus eryngii,which has various physiological activities.In this paper,Based on the literature published at home and abroad in recent years,the research progress on the biological activity of Pleurotus eryngii polysaccharide in the aspects of immune regulation,anti-tumor,anti-oxidation,anti-fatigue,hypoglycemic and lipid lowering,antibacterial and other aspects was reviewed,and the possible future research direction of Pleurotus eryngii polysaccharide was proposed,in order to provide reference for the research and development of Pleurotus eryngii polysaccharide.
