摘 要:丹皮酚与槲皮素等多酚物质在单一使用时均表现出较好的抗氧化特性,但其抗氧化活性的协同作用尚不清楚。以ABTS自由基清除率为抗氧化活性评价指标,考查丹皮酚、槲皮素、咖啡酸、阿魏酸、芥子酸、儿茶素、抗坏血酸、对羟基苯甲酸、3,4-二羟基苯甲酸的单一抗氧化活性,选取ABTS自由基清除能力较强的槲皮素、儿茶素、阿魏酸与丹皮酚进行复配,并运用响应面法优化并探究丹皮酚与槲皮素、儿茶素、阿魏酸的协同抗氧化作用。结果表明,丹皮酚与槲皮素等多酚物质间存在一定的交互作用,丹皮酚质量浓度为3μg/mL,槲皮素质量浓度为2μg/mL,儿茶素质量浓度为2.5μg/mL,阿魏酸质量浓度为2μg/mL,协同系数SE值大于1,4种多酚物质之间存在协同抗氧化作用。Polyphenols such as paeonol and quercetin showed good antioxidant activity when used alone,but the synergistic effect of their antioxidant activity are still unclear.In this experiment,ABTS free radical clearance rate was used as the antioxidant activity index to evaluate the single antioxidant activity of paeonol,quercetin,caffeic acid,ferulic acid,erucic acid,catechin,ascorbic acid,p-hydroxybenzoic acid and 3,4-dihydroxybenzoic acid.Quercetin,catechin and ferulic acid with strong ABTS+·scavenging ability were selected to compound with paeonol,and response surface methodology was used to optimize and explore the synergistic antioxidant effect of paeonol with quercetin,catechin and ferulic acid.The results showed that there was a certain interaction between paeonol and quercetin and other polyphenols.When the concentration of paeonol,quercetin,catechin and ferulic acid were 3μg/mL,2μg/mL,2.5μg/mL and 2μg/mL,the SE value was greater than 1.According to our study,synergistic antioxidant effect existed among the four polyphenols.
