摘  要:为快速测定婴幼儿零食中氯离子的含量,采用超声浸提法对样品进行前处理,用氯离子选择电性电极浓度直读法进行测定。结果表明,通过单因素试验和正交试验得出最佳条件为柠檬酸钠质量浓度为0.20 g/L,总离子强度调节缓冲剂为pH值5.50,硝酸钾的浓度为1.00 mol/L时,样品中手指饼干、鳕鱼肠、溶豆、蛋酥、肉松海苔中氯离子的含量分别为0.944,0.593,2.022,1.089,3.801 mg/g,加标回收率为88.7%~103.6%。试验结果与国标法通过F和t检验对比,表明两者无显著性差异。该方法读数直观、计算简单、仪器易于便携,节省试验时间,利于现场快速检测。In order to quickly determine the content of chloride ions in snacks for infants and young children,the samples were pre-treated by ultrasonic leaching method,and then using direct reading method to measure the concentration of chloride ion-selective electrode concentration.The optimal conditions were obtained by single factor and orthogonal experiments as follows:the addition amount of sodium citrate was 0.20 g/L,the total ionic strength adjusting buffer was pH 5.50,and the concentration of potassium nitrate was 1.00 mol/L.The results showed that the contents of chloride ions in finger biscuits,cod sausages,melted beans,meringues,and meat floss seaweed in the samples were 0.944,0.593,2.022,1.089,3.801 mg/g,respectively,the recovery rate of standard addition was between 88.7%~103.6%.The experimental results were compared with the national standard method by F and t tests,which showed that there was no significant difference between the two.The method had the advantages of intuitive reading,simple calculation,easy portability of the instrument,saving experimental time,and facilitating rapid detection.
