摘 要:为研究不同pH培养水平对不结球白菜品质和花青素积累的影响,采用紫叶品种‘紫冠’及其绿色突变体作为研究材料,设置不同pH水平的营养液进行培养(3.0、5.0、7.0和9.0)。结果表明,叶片的pH与营养液pH显著相关;pH 5.0和pH 7.0处理组不结球白菜的可溶性糖、可溶性蛋白含量、叶绿素含量以及利用弱光的能力均高于其他处理;紫色品种在酸性条件(pH 3.0)下光合能力最强,而绿色品种在弱酸性条件(pH 5.0)下光合能力最强且强于紫色品种。另外,紫色品种在pH 5.0和pH 7.0培养下叶片紫色性状较明显;pH 5.0处理组花青素增长量以及查尔酮异构酶(CHI)和苯丙氨酸解氨酶(PAL)的相对含量显著高于其他处理;定量分析也表明pH 5.0处理组花青素合成关键基因总表达量最高。综上,施用不同pH营养液对不结球白菜品质和花青素积累均有显著影响,pH 5.0~7.0的条件更有利于提升不结球白菜的品质,pH 5.0最利于花青素积累,更精确的结果需扩大样本数量和pH梯度进一步试验。In order to study the effects of different pH culture levels on the quality and anthocyanin accumulation of non-heading Chinese cabbage,the purple leaf cultivars‘Ziguan’and its green mutants were used as materials in the study,and nutrient solutions with different pH levels(3.0,5.0,7.0 and 9.0)were used for cultivation.The results showed that the pH of leaves was significantly correlated with the pH of nutrient solution.The contents of soluble sugar,soluble protein,chlorophyll and low light utilization ability in pH 5.0 and pH 7.0 treatments were higher than those in other treatments.Purple cultivar had the strongest photosynthetic capacity under acidic condition(pH 3.0),while green cultivar had the strongest photosynthetic capacity under weak acidic condition(pH 5.0)and was stronger than purple cultivar.In addition,purple character of leaves was more obvious in purple cultivar under pH 5.0 and pH 7.0.The increase of anthocyanin and relative contents of Chalcone isomerase(CHI)and Phenylalanine ammonia lyase(PAL)in pH 5.0 group were significantly higher than those in other treatments.Quantitative analysis also showed that the total expression of key genes in anthocyanin synthesis was the highest in pH 5.0 treatment group.In conclusion,application of nutrient solution at different pH levels has significant effects on the quality and anthocyanin accumulation of non-heading Chinese cabbage.The condition of pH 5.0-7.0 is more conducive to improve the quality of non-heading Chinese cabbage,and pH 5.0 is most beneficial to anthocyanin accumulation.More accurate results areneeded to be further tested by enlarging the sample number and pH gradient.
