摘　　要：[目的]建立3种茶叶的多指标分析及评价体系。[方法]选择安溪本山、金骏眉、八仙茶3种茶叶作为研究对象,测定3种茶叶的燃烧热、燃烧稳定性、脂肪、粗纤维、灰分、微量元素。[结果]3种茶叶燃烧热的顺序为:八仙茶>安溪本山>金骏眉;燃烧稳定性排序为:安溪本山>八仙茶>金骏眉;脂肪含量大小顺序为:安溪本山>金骏眉>八仙茶;灰分含量大小顺序为:八仙茶>金骏眉>安溪本山;粗纤维含量大小顺序为:八仙茶>安溪本山>金骏眉。燃烧热、燃烧性(茶叶的燃烧稳定性)、脂肪、灰分、粗纤维含量、微量元素含量多指标的顺序为:八仙茶>安溪本山>金骏眉。[结论]为大规模开发茶叶资源以及茶叶分类研究提供有力的科学依据。[Objective]This study established a multi indicator analysis and evaluation system for three types of tea.[Method]Anxi Benshan,Jinjunmei and Baxian tea were selected as the research objects,and the combustion heat,combustion stability,fat,crude fiber,ash and trace elements of the three kinds of tea were determined.[Result]The results showed that the order of burning heat of the three kinds of tea was:Baxian tea>Anxi Benshan>Jinjunmei;The order of combustion stability was:Anxi Benshan>Baxian tea>Jinjunmei;The order of fat content was:Anxi Benshan>Jinjunmei>Baxian tea;The order of ash content was:Baxian tea>Jinjunmei>Anxi Benshan;The order of crude fiber content was:Baxian tea>Anxi Benshan>Jinjunmei.The order of multiple indexes of combustion heat,combustibility(combustion stability of tea),fat content,ash content,crude fiber and trace element content was:Baxian tea>Anxi Benshan>Jinjunmei.[Conclusion]This paper provides a powerful scientific basis for large-scale development of tea resources and tea classification research.
