摘  要:壳寡糖是壳聚糖的低分子量降解产物,具有良好的生物安全性、抗菌性、抗氧化性及可降解性。本文采用微波酸水解法降解低分子量壳聚糖,制备聚合度为6~8之间的低聚壳寡糖,并利用红外光谱对其结构进行了表征,用碱量法和端基分析法对其脱乙酰度和数均分子量进行了测定。另外,研究了低聚壳寡糖的抗氧化活性,包括:羟基自由基清除能力、超氧阴离子自由基清除能力和DPPH自由基清除能力。研究表明:低聚壳寡糖对超氧阴离子自由基的清除能力很强,可达到77.1%,对羟基自由基和DPPH自由基的清除能力相对较弱,只能达到3.6%和58.9%。Chitosan oligosaccharide is a low molecular weight degradation product of chitosan,which has good biological safety,anti-bacterial,anti-oxidation,and degradability.In this paper,the microwave acid hydrolysis method was used to degrade low molecular weight chitosan to prepare the oligochitosan oligosaccharides with a degree of polymerization between 6 and 8,and the structure was characterized by the infrared spectroscopy.The degree of deacetylation and number-average molecular weight were determined.In ad-dition,the antioxidant activities of oligochitooligosaccharides were studied,including the hydroxyl radical scavenging ability,the su-peroxide anion free radical scavenging ability,and the DPPH free radical scavenging ability.The results showed that the oligochito-oligosaccharide had a strong scavenging ability to superoxide anion free radicals,which could reach 77.1%,and the scavenging abili-ty of hydroxyl free radicals and DPPH free radicals was relatively weak,only reaching 3.6%and 58.9%.
