摘  要:选择不同产地的肉桂、西湖叶、花香水仙三种茶叶作为研究对象,测定三种茶叶的燃烧热、燃烧稳定性、脂肪、粗纤维、灰分、微量元素。结果表明,3种茶叶燃烧热的顺序为西湖叶>肉桂>花香水仙;燃烧稳定性排序为西湖叶>花香水仙>肉桂;脂肪含量(%)大小顺序为肉桂>花香水仙>西湖叶;灰分含量大小顺序为肉桂>花香水仙>西湖叶;粗纤维含量大小顺序为肉桂>花香水仙>西湖叶。燃烧热、燃烧性(中草药的燃烧稳定性)、脂肪含量、灰分、粗纤维、微量元素含量多指标的顺序为肉桂>花香水仙>西湖叶。本研究建立3种茶叶的多指标分析及评价体系,为大规模开发茶叶资源及茶叶分类研究提供有力的科学依据。3 teas including Cassia tea,West lake leaves and Floral Narcissus were selected as the research objects.The combustion heat,combustion stability,fat,ash,crude fiber and trace element contents of 3 teas were determined.The results showed that the order of combustion heat of the three tea was West lake leaves Cassia tea Floral Narcissus;The order of combustion stability was West lake leaves Floral Narcissus Cassia tea;The order of fat content(%) was Cassia tea Floral Narcissus West lake leaves;The order of ash content was Cassia tea Floral Narcissus West lake leaves;The order of crude fiber content was Cassia tea Floral Narcissus West lake leaves;The order of multiple indexes including combustion heat,combustibility(tea combustion stability),fat content,ash,crude fiber,trace element contents was Salvia Cassia tea Floral Narcissus West lake leaves.In this study,the multi-index analysis and evaluation system of three teas established can provide a strong scientific basis for the large-scale development of tea resources and the classification of tea.
