摘  要:植物多酚由8000多种不同的化合物组成,主要存在于蔬菜、水果、谷物及草本植物中,酚羟基是其共同的结构。植物多酚具有抗炎、抗糖尿病、抗菌、抗肿瘤和抗氧化等生理功能。植物多酚作为一种绿色饲料添加剂可以通过提高畜禽的抗氧化能力、影响肌纤维的类型和调节脂质代谢来改善肉品质。文章综述了植物多酚的种类、调控畜禽肉品质的作用机制及其在调控畜禽肉品质领域的应用,以期为植物多酚在畜禽生产中的进一步开发利用提供参考。Plant polyphenols are composed of more than 8000 different compounds,which are mainly found in vegetables,fruits,cereals and herbs.Phenolic hydroxyl group is the common structural feature.Plant polyphenols have physiological functions such as anti-inflammation,antidiabetes,antibacteria,anticancer and antioxidant.Plant polyphenols,as a green feed additive,can improve meat quality by increasing antioxidant capacity,affecting muscle fiber type and regulating lipid metabolism.In this paper,the species of plant polyphenols,the mechanism of regulating meat quality of livestock and poultry,and its application in the field of regulating the quality of livestock and poultry meat were reviewed,in order to provide reference for further development and utilization of plant polyphenols in livestock and poultry production.
