摘 要:通过检测云南省12个州(市)397批畜禽肉样品水分限量,分析与研究猪肉、牛肉、羊肉水分含量状况。参照《畜禽肉水分限量》(GB18394-2020)中直接干燥法检测,397批样品有11批不合格,总体合格率97.23%。其中猪肉样品检测292批,合格286批,检测合格率97.95%;牛肉样品检测74批,合格71批,检测合格率95.95%;羊肉样品检测31批,合格29批,检测合格率93.55%。The moisture content of pork,beef and mutton was analyzed and studied by measuring the moisture content of 397 batches of poultry meat samples from 12 prefectures(cities)in Yunnan Province.According to“Moisture limit of livestock and poultry meat”(GB18394-2020),11 out of 397 samples were unqualified by direct drying method.The overall qualified rate was 97.23%.Among them,292 pork samples were qualified for 286 samples,and the qualified rate was 97.95%;74 beef samples were qualified for 71 samples,and the qualified rate was 95.95%;and 31 lamb samples were qualified for 29 samples,the qualified rate was 93.55%.
