紫云红芯薯营养价值分析及评价

摘  要:为了解紫云红芯薯的营养价值,以紫云红芯薯为试材,采用国家标准方法、FAO/WHO模式中的氨基酸评价标准及氨基酸比值系数法,对紫云红芯薯块根中的营养价值进行评价。结果显示,紫云红芯薯块根中营养元素含量及16种氨基酸含量存在差异,灰分含量较低,有机组分中淀粉含量>蛋白质含量>还原糖含量,K含量>Fe含量>Zn含量;必需氨基酸与非必需氨基酸的含量分别为3530 mg/kg、6970 mg/kg,E/T为0.336,E/N为0.506,大于FAO/WHO提出的优质蛋白质氨基酸组成标准;呈味氨基酸中鲜味氨基酸>甜味氨基酸>苦味氨基酸,鲜、甜味氨基酸占呈味氨基酸含量的68.95%;苏氨酸、酪氨酸+苯丙氨酸相对过剩,缬氨酸、赖氨酸、蛋氨酸、异亮氨酸相对不足,蛋氨酸为第一限制氨基酸,SRC为66,营养价值较高。该研究表明了紫云红芯薯块根是适宜蒸煮的鲜食型甘薯,具有独特的香甜味,营养价值较高,通过合理膳食,可满足人体所需的营养要求。To understand the nutritional value of the Ziyun Red Core Sweet Potato,Ziyun Red Core Sweet Potato was used as test material,and the method of National Standard,FAO/WHO pattern and the amino acid ratios coefficient(SRC)were used to analyze the nutritional value of Ziyun Red Core Sweet Potato.The results showed that there were differences in the contents of nutrient elements and 16 kinds of amino acids in the root tubers,the content of ash was lower.In the organic component,the starch content>protein content>reducing sugar content,K content>Fe content>Zn content.The contents of essential and nonessential amino acid were 3530 mg/kg and 6970 mg,respectively.The value of E/T was 0.336 and the E/N was 0.506,which was higher than the standard of high-quality protein proposed by FAO/WHO.Among the flavor amino acids,umami amino acids>sweet amino acids>bitter amino acids,umami and sweet amino acids were accounted for 68.95%among the flavor amino acid contents of Ziyun Red Core Sweet Potato.Thr and Tyr+Phe were relatively surplus,Val,Lys,Met and Ile were relatively deficient,Met was the first limiting amino acid,SRC was 66,which means it has high nutritional value.This study showed that the root tuber of Ziyun Red Core Sweet Potato is a kind of fresh sweet potato which is suitable for cooking.It has unique sweet taste and high nutritional value,can meet the nutritional requirements of the human body by reasonable diet.
