摘 要:西湖龙井茶的手工炒制技艺,既有特殊的技术价值,也有非物质文化遗产的文化价值。在机械化加工日益普及的趋势下,西湖龙井茶手工炒制技艺的传承正面临极大挑战。文章回顾并总结了西湖龙井茶手工技艺演变趋势,对全手工西湖龙井茶炒制过程中四大技艺环节“摊放、杀青、回潮、辉锅”进行技艺总结,希望能够在西湖龙井茶数字化转型的浪潮下,对龙井茶手工炒制技艺的传承保护有所裨益。The craftsmanship of West Lake Longjing Green Tea,as intangible cultural heritage,has both special technical values and cultural values.The popularization of mechanized processing poses great challenges for handmade West Lake Green Tea.The technology evolution of tea production has been reviewed in this study.Meanwhile,the four technological procedures in the process of manual frying of West Lake Longjing Green Tea were summarized.The aim of this study is to inherit and protect the processing technology of West Lake Longjing Green Tea against the background of digitalization transformation in the tea industry.
